Chef Steven Howard started this Consulting Business because he truly wants to help people. “It’s part of my DNA,” says the Chef, “I come from a long line of Irish Catholic women that always engrained in me the need to help your Family, your Neighbors and your Community. I’ve reached a point in my Culinary Career where my age and focus aren’t driving me anymore for my own personal need to have things, titles and accolades. I’ve done that. It’s time to share all my experiences in Operating, Owning, Marketing and Developing Bars, Restaurants and Catering Companies so I can help others move toward the success that I have had. In helping others, I can gain a new career journey and a new sense of self worth that just “doing for yourself” doesn’t provide.”
The Chef has formatted our Consulting Services to include 4 Styles of Consultation: 1. Individual Issue Consulting – Hourly Charges for ON-Site or OFF-site Sessions, usually for less than 1 or 2 days
2. Targeted Project Consulting – Time-limited, Single or Multi-Focus Concepts for a Pre-Set Price per Project
3. Full Business Reviews and Consultations – Multi-Concept Business Overviews for either Pre-Set or Estimated Pricing
4. Customize your own Consulting Package – Any combination of Issues & Concepts above for either Pre-Set or Estimated Pricing
.
5. "Immediate Needs" Consulting - For Businesses in Jeopardy of Closing needing Complete
Business Makeovers on Short Notice for negotiated Pricing
.
With these easy to understand Consulting styles, which you can read about in our “Consulting Category Section” below, you should be able to identify which Consultation is most appropriate for your business’ need and cost tolerance.
“The other business acumen I absolutely insist upon is complete transparency,” says Chef Steven. “My Father, who was a very successful Retailer and Hobbyist Light Equipment Manufacturer, said to always deliver on any promise you make and don’t make any promise you can’t deliver upon. Nothing ruins a business faster than not delivering what you represent. It is far better to under promise and over deliver than vice versa. People need to know what to expect from you and you must fulfill those expectations.” Because of this, Consult the Chef works one Contract at a time with EVERYTHING SPELLED OUT IN CONTRACT FORMAT BEFORE WE ACCEPT ANY PAYMENT FOR OUR SERVICES. Here’s what you can expect: • You will see all the expected Services to be rendered and Areas of Focus listed on our Contract in the form of a Project Outline, with expected tenant Charges for Time necessary to execute, that You must sign-off
before we start any Official Consulting Job, or accept any Monies. We do not start any work until Contracts
are signed.
• While executing your existing Contract, completing our Item Checklists, if we discover any other immediate need(s), a new Contract(s) will be drawn up to address that specific extended or secondary Consultation
issue(s) or Project, that once again, You must sign-off before we start or accept any Monies
• Consult the Chef will not start work until you understand EVERY listed element on any Contract. If you are not comfortable with any Consulting element, we will adjust the Contract until YOU ARE
COMPLETELY COMFORTABLE with signing.
. Again, our goal is to HELP distressed and/or expanding Businesses, not put fuel on an existing cost sensitive fire! We’ve heard horror stories of other Consulting services starting out saying they are charging a flat hourly fee, then add back end charges for all sorts of extra time and extra project charges that the Business owner wasn’t fully aware of and owed far more money at the end of the process than they were prepared for. Regardless of payment structures we may agree to, EVERTHING WILL BE IN WRITING SO BOTH the Client and Consult the Chef WILL KNOW WHAT EACHOTHER’S RESPONSIBILITIES & EXPECTATIONS ARE. This is absolutely another version of our KNOWLEDGE IS POWER operating mission.
If this is the kind of Commitment to your Empowerment that makes sense to you or you haven’t received this level of up-front transparency from other Consulting Services, then go with the INDUSTRY LEADER for CONSULTING STANDARDS and call us today!
The Consultation Process and Hiring us
.
It should be pretty clear as to what you can expect from us during our Introductory and Working Periods. Remember our goal is to be a Business Resource to Empower the Entire Food & Beverage Service & Hospitality Industry. If all you need is a couple questions answered that don’t require Proprietary Programs or Lengthy Solutions from us, go to our “Talkback Section” for Online Questions and Answers. You can also Email or Call the Chef directly for more confidential Counseling regarding your easy issues via our “Contact Us” Section and we invite you to check-in and regularly read the “Chef’s Blog” on all kinds of Topics concerning our Industry and your Business. Otherwise, follow below to view our Individual Category Section to see which style of Consultation best fits your needs.
Individual Consulting Categories - I’m ready to go ahead. I like your Business Model and Experience, but how do I decide which Consultation is best for me? Will you be there to help me afterwards? And how do I keep you from billing me for things I don’t want and services I don’t need? I’ve never done this before and I don’t want to feel like a dupe!
Believe us, we understand your reticense! It's tough always being in control and then having to turn that control over to someone else. That's why we try to be Informative first, Consultative next and leave the Financial Business until last. We want to first discuss your questions to determine what your needs are. Then we can talk about our experience in those areas so you can determine if those recommendations sound and feel "right" for your business. Then finally we'll lay out everything in writing for you so you have clear ideas of our tasks and their tenant costs prior to engaging us in any way. Any changes you would like to make are at your discretion before Contract signing. We try to give you as much control over the situation as possible so you feel completely informed, involved and connected to every step of our process. Below are the Consulting Formats we offer to help your Food & Beverage Service & Hospitality Business...
Every Individual Issue or Session Consultation Course includes a Course Outline (as part of Contract) and a Checklist of associated Covered Issues (or Elements) to be completed. During the Consultation Session, notes will be made as to points of interest and/or complex issues that need to be highlighted or noted in writing. In addition to the “Live” Consultation, a Session Report will also be developed to chronicle these issues. The Report is delivered to each Client so they have a permanent written resource they’ll retain for future reference in addition to our “Live” Follow-up Support Sessions.
Billed by the hour - $125.00 per hour – 3 hour Minimum – 12 Hour Maximum
These are Individual Issue Sessions (or Courses) if you will, that offer intense focus on one specific Area or Task. For example, most of the individual Sub Sections under any Title Section listed in our Heading Tool Bar Bar, would qualify as long as the Consultation is shorter than 12 hours total or a little over one day. Here are Individual Consulting Issue Examples:
FOH Sales Training – Chef or Cook Individual Skill Training – Labor Matrix Scheduling – Creating Maintenance Schedules – Instruction to Creating a Viral Marketing Program – plus many, many more listed throughout our site
These Issues or Sessions will be estimated for length of time via on-site Consultation or Computer Internet Meeting depending on your situation, preference and business location. All Consultations will include Initial Consultation time, Follow-up Report Development time and appropriate Follow-up Support Consultation time.
.
Therefore a 3-hour minimum project would include:
1-Hour Initial “Live” Instruction – 1-Hour Session Report developed & delivered –
1-hour available “Live” Follow-up Q & A time for only $375.00
“Contact Us” to discuss your Individual Consulting Issue or Session Needs
or visit our "Training" Heading Section to view specific pre-planned BOH & FOH Training Courses
.
Like Individual Issue Consulting, for Consulting Projects, a Project Outline and Element Checklist will also be developed. Unlike Individual Issue Consultations, a Targeted Consulting Project will usually encompass many different Issues & Elements of an entire Concept and may require several separate On-Site Visits over periods of time or a longer Extended Stay Visit of several consecutive days. Usually, a Per-Project Price will be agreed upon by Consult the Chef & the Client to save the client money over multiple visits. This also puts the burden of timely completion on the Consultant, not the Client.
Time estimates will be made by Consult the Chef as to “Live” Consultation, Project Report Development and potentially necessary Follow-up Support Consulting. The idea here is to offer a much LOWER COST for extended projects than our per-hour short consultations. These are usually going to be developmental style Consultations meant to improve or implement a new Program or Process in your Daily Operations. More “Intense or Immediate Need” Consultations require multiple Concept Reviews and are under our “Full Business Review” Packages in the Section below. Targeted Project examples might be:
Implementing a Community Marketing Program for your Restaurant
Implementing a New Catering & Delivery Operation Complete Menu Cost Overhaul & New Menu Development Comprehensive Operations Overhaul & New Labor Crew Development And many, many more areas listed throughout our site
We know we can implement a Community Marketing Program for a Smaller sized Business (between 10K to 40K per Month Volume as an example) in the following time frames and Consulting formats;
.
.
2-day On-site Initial Consultation, 2 more half-day meetings for Implementation,
1 day “In-the Field” Training & 8 hours follow-up Support
.
.
However, the Collateral Material will take time to develop and several meetings with Graphic Designers, Printers and Web Masters may be required. This could actually reflect closer to 8 to 10 days total work-time plus the Project Report development and 8 hours of Follow-up Communication time that might be necessary.
To cut down the cost on a project whose completion is based on so many variables, we find it more advantageous to the Client for us to Charge a Flat Rate from inception to completion of this entire Project instead of billing by the hour. Mainly, because a 1 hr. visit here or 2 hrs for a meeting there, runs up a Consulting Bill in a hurry and you really have no control of your costs. Flat Fees encourage the Consultant to work more efficiently and the Client owns the Cost Control leverage. A reasonable Flat Fee for this Project might be:
@ $4800.00
Each Bar, Restaurant or Catering Company’s actual Situation will differ and the complexity and size of each Project will differ also. However, Based on our Revenue Development Chart in our “New Revenue Heading Section,” we conservatively estimate revenues (based on past experience) produced by this program as $3200.00 within the first month, thus paying for all of our Consulting costs within 6-7 weeks of project Roll-out. This reflects about 80 hours of work and has our services paid for, well within our One Quarter Goal.
.
THIS IS POWERFUL COST VS.BENEFIT CONSULTING!
.
.
“Contact Us” to discuss your Targeted Project Consulting Needs
We offer several Comprehensive Review Packages that include our Customary Project Outline and Element completion Checklist. Our "Sectional Reviews" check all elements of One or Two Main Aspects of your Business. Our "Full Comprehensive Business Reviews" involve an overview of the 5 Main “Business Sections” of Your Bar, Restaurant or Catering Company. These include but aren’t necessarily limited to:
Operations, Management, Marketing & Advertising, Menu & Cuisine and New Revenue Development.
The Individual Section Review usually Requires 2 or 3 Days of On-site and/or Off-site Communication addressing approximately 50 points of Crucial Information that key your Business’ success in that specific Area or Section; each Section will vary. Consult the Chef will send out a “Needs” Sheet prior to our arrival for you to have ready and prepared for our analysis. Not having this information completely ready or available will either produce a lengthier (more Costly) consultation or incorrect numbers & information, meaning we can’t do an effective job for you. As we stress, transparency is critical and we can’t get a real view of your business without timely and complete information.
Our Reviews differ from our Project Consultations in that they Only Produce Reports that Recommend Actions for Solution, not actual Implementation time and/or execution of projects.
This is perfect for the Franchisee or Owner Operator who just needs the information and can implement our solutions on his/her own or simply wants a report card on their Business or Section of Focus and then will take steps based on the findings. We think you’ll be surprised how many times we’ll find you probably only need a few key changes to Organization, Time Management, some new Menu Suggestions and some Marketing Solutions you can execute on your own for Low, Low cost. Also Remember we build in mutiple hours of Follow-up Support time so you can ask questions or have us return up to 90 days after our Reports are delivered. To do an Individual Section Review for your Bar, Restaurant or Catering Company’s Operations, Management, Marketing & Advertising, Menu & Recipes or New Revenue Development our costs would breakdown something like this:
1½ – 2 days On-site “Live” Consultation, 1-Day Informational Review, 1-Day Report Production and about 8 hours Report Review and Follow-up Support Consultation.
.
.
For a Smaller sized Business (between 10K to 40K per Month Volume), this reflects about 40 hours of work for a Business Section Review. Our reasonable flat fee would be:
@ $2400.00
Each Bar, Restaurant or Catering Company’s actual Review Situation will differ and the complexity and size of each Project will differ also. We will Negotiate size and complexity appropriate pricing for each Business Section Review.
___________________________________________________
Our Best Value by far, is our Full Comprehensive Business Review. We Target about 30 key points of interest over the 5 main Business Sections (over 150 total key points of Review) that produce success and we deliver an entire Integrated Business Report for you, giving you recommended solutions plus a Recommended Execution Timeline to benefit the health and future of your Business. The Business Review usually features:
3-Days on-site Consulting, 2 days informational Review, 2 days Report Production, 12 hours report Review and Follow-up Support Consultation.
.
.
For a Smaller sized Business (between 10K to 40K per Month Volume), This reflects about 70 hours of work for a Full Comprehensive Business Review. Our reasonable flat fee would be:
@ $3750.00

The most challenging Business Review is The “Immediate Need” Review. These are usually situations where problems have so overwhelmed a Franchisee or Owner Operator that the business environment is quite intense and Immediate Action may be necessary to maintain the viability of the Business. We understand that this is usually quite a humbling experience and we try to tread as lightly as possible, yet direct with absolute leadership so we can alleviate the problem as quickly as possible and get you back making money, serving food and giving out paychecks. We usually Privately Negotiate these types of Consultations on a different payment scale and structure, as available cash and finances are usually more challenging than normal. We will call on every Vendor, Employee and Creditor to re-establish your reputation and viability through our network of top Industry Professionals. We will help solve your problems with the best minds in the Food & Beverage and Hospitality Industry. Again, we’re here to help and serve you in good times and hard times.
“Contact Us” Today for either a focused Business Section Review, A Full Comprehensive Business Review or an Immediate Need Review and any Consulting Needs.
This is where everything becomes possible for your Bar, Restaurant or Catering Business. You can get all the help you need, as little help as you want, or any and all help in between. Plus, we deliver the Value you need in today’s environment to help your Business get lean & mean for controlling Costs and building Profits.
Here’s a perfect example of a Business that has several Consulting needs: Let’s say that you know that you need new Revenue Sources for your Business because in-house sales are stale, but you don’t know how to implement them or do the proper Marketing for them and you’ll need Training for your staff as well. But while you’re at it, you think a Management Review would be a good idea too, just to make sure you and your Lead People are staying on top of everything. Plus, what you’ve always wanted (but never had the time for,) are Training Manuals written for every position in your Business so you can save training time & money and keep consistency throughout the life of your Operation. This would qualify as a Customized Consulting Package. You want several different Consulting programs that cover several different areas of need. So how might the costs break down for the same Small sized Business (between 10K – 40K per Month Revenue) that we’ve modeled in our other estimated Consulting Charts? • The Management Review is an Individual Section Review @ $2400.00 • The Catering & Delivery Program is a New Revenue Project @ $4000.00 • 8 hrs. Cook Training for Added Recipes is an Hourly Session @ $1000.00 • The partner Community Marketing Program is also a Project @ $4800.00 • The Training Manuals (Server, Bartender, Prep Cook, Line Cook, Cashier, Hostess, Busser, Dishwasher, Porter) are a Project @ $2800.00 Individual Billing would be…………………………………….$15,000.00 The “Individual Billing” is how we would work it if we were called back a few weeks apart on each issue independently. However, one of the things we try to accomplish with this Website is to give you a clear idea of need and solution up front, so if you’ve already got a good idea of what you want or need. We’re willing to save you even more money doing a Customized Package Consultation. As this Model represents about 5 to 6 weeks worth of work, we’re willing to condense this into one Customized Project Consultation for about.………………..$12,500.00 Then Compare our Value… Our Management review should produce an estimated Savings - $2400.00 Our Manuals will save you a Month of your Time to create - $6000.00 (conservative) Plus saved time and money due to Training time & efficiency - $1000.00 per job title New Revenue (conservative) from Catering & Delivery 1st Quarter - $9600.00 New Revenue In-House residual from Community Marketing 1st Qtr - $6000.00 This entire Customized Project should Result in Savings & Revenue - $25,000.00 (conservative estimate – 1st Quarter - at least $18K next Quarters & beyond ) This is a $12,500.00 Positive Cash Flow benefit to your Business! Any Manager, Chef or Program Director you would Hire to run your Operation and implement these Programs and Changes would cost 50K- 80K per year and it would probably take 6 months to a Full Year to accomplish these goals, if they ever could find the time while simultaneously running the daily Business! A Full Time Hourly employee making $12.00/hr. @ 40hrs./week plots out to $24,000.00 per year without taxes and insurance! Our Consulting fees are the best Value in the Industry! This is why Consulting the Chef is a benefit to EVERY Bar, Restaurant or Caterer! Consult the Chef is the BEST SOLUTION for your Bar, Night club, Cocktail Lounge, Sports Bar & Grill, Small Plate Wine Bar, Micro Brewery & Sandwich Shop, Mexican Grill & Margarita Bar, Tapas Bar, Family, Casual or Fine Dining Restaurant, Pizza & Pasta Italian Restaurant, Asian Take-out or Delivery place, Dessert & Coffee shop, Bakery, Soup & Salad Bar Cafeteria or Deli Counter or any Industrial or School Kitchen that needs help to make more money! .

Associated Costs, Travel and Logistics While we are Headquartered in the San Francisco Bay Area, we’re willing to Travel to any destination Nationwide to help any Food, Beverage or Hospitality Business succeed. “It’s kind of a ‘Planes, Trains & Automobiles’ thing when we’re traveling around the United States,” says Chef Steven Howard. “We aren’t real stuffy about how we get somewhere or where we stay and sometimes, with connections and transportation mode changes, things can get pretty goofy!”
For Local Bay Area, Northern California clients we’re willing to travel up to an hour via Automobile (about 50 Miles) to any location without charging any extra travel Costs. We do add Travel Time & Fuel Surcharges (about $25.00 per Hundred Miles roundtrip) if we have a longer commute, depending on distance. However, the real critical issue becomes coordinating travel with style of Consultation. For example, let’s say we have a client in Sacramento or Fresno, California. From our Location in the East Bay, we are about 1½ hours car time each way. The Consultation calls for 3 days on-site time. Even though the commute is do-able, we’ll probably want to stay in Overnight Accommodations, so the surcharge would diminish. For further Destinations, say Los Angeles, Las Vegas, San Diego, Tucson or Phoenix/Scottsdale we would need either Airline or Rail Tickets depending on schedule and if overnight Accommodations weren’t available near your venue, then a Rental Car would be necessary also. If we’re traveling across Country to the Midwest, East Coast or the Southland, we know Smaller Towns may require Airline, Rail and Rental Car arrangements as well as Overnight Accommodations. All Associated Travel Costs are the financial responsibility of each contracted Client to get us to our Destination and Back home to the Bay Area. However, Travel Logistics are very negotiable as far as time, style and location. We like to really get to know our Clients so we’re okay with Rooms in Personal Homes or borrowing personal Automobiles as a method of saving money. We usually schedule Consultations at least 2 to 3 weeks in advance (“Immediate Need” Consultations notwithstanding) so we can book the least expensive Airline flights. All travel costs are paid in advance directly to each travel provider. Our consultants are used to staying in Two-Star AAA rated Motel/Hotel Chains. If you have a discount at a local Property that works out to a cost advantage we’re open to changes as long as quality is not compromised. Again we’re willing to save you as much money as possible but cleanliness, safety and personal standards have to be maintained. We will discuss & list all travel needs on every contract and nothing should be booked for the consultant prior to Contract signing. As far as other Expenses or Associated Costs of our Consultations, remember that we will need to Eat and Drink in your Bar, Restaurant or Catering Venue for most meals while we are there to gauge your Cuisine quality and review your Menu & Pricing. The client should also cover meals at Competing Venues that are required to visit for Review. Special equipment or Supplies that might need to be purchased to complete any project in the Client’s Venue will also be at the client’s expense (i.e. Signs, Office Supplies, Cooking Utensils or Cleaning Equipment, etc.) Lastly, please also remember when we Estimate or Quote pricing, it is for our primary labor only. Printing Collateral, Media Time, Website building & registration and any associated Equipment, Goods or Services that are necessary to Implement any Project are the Full Financial Responsibility of each Client. For example, in our Customized Consulting Package model drawn out above, we might recommend several different needs: • If in the Management Review we recommend a new POS computer processing system program, that program and training would be at the Client’s expense from the POS company • The Catering Program will probably require some Chaffers, Hot/Cold Holding units and Serving & Display Equipment investment at the Client’s expense • The Cook Training may require some new Light Equipment & Utensils depending on need at the Client’s expense • The Community Marketing Program may require Printed brochures, Menus, In-Restaurant Signage, Website upgrades, extra Delivery & To-go Packaging. All of these necessary Items and Services are at the Client’s expense. We don’t produce any of these things; we sit with the producers and dictate elements, assist in design, wording and format and then coordinate these producer’s efforts into one Successful integrated Project to be delivered complete to you. • The Training Manuals will be delivered Digitally so you can get them printed at your expense in the format of your Choice, unless, we Contractually agree for us to produce printed copies for you and then the Bid would include charges for Paper, Printing and Bindery. Our Contracts spell out all of the details of every Consultation we enter into. If you have any questions, please address them prior to Signing your Contract. If we’ve missed something or you aren’t clear on an issue or item or want a further explanation, please don’t hesitate to ask. We want to deliver on our promises and want you as happy and successful as you can be.
The Chef’s Charitable Mission
Consult the Chef has a Charitable Cooking Program called "Dinners with Father." This is the Brainchild of Chef Steven Howard, our Founder, to help Support the Leaders of Faith Communities through publications of the Histories and Testaments of Catholic and Non-Catholic Pastors throughout the Country. . “As an American Irish Catholic and Christian Man,” says Chef Steven, “ I have been touched by Men and Women of great Faith who have sacrificed their Lives to the service of others. I have personally been victimized by the fallen acts of abuse and betrayed Family trusts. Unfortunately, some people in Faith Leadership roles have also been chronicled to have victimized others with these fallen acts, when they strayed from their Faith and succumb to the same human weaknesses that I was forced to endure by people entrusted by my Parents to Love and Help raise me.” I know from personal experience, these acts certainly devastate Lives and their lasting effects sometimes are never healed." “However, the one thing I promised myself after my childhood experiences, was to never let the actions of the fallen dictate my opinion of the good.” “Across all Faiths, I believe many have suffered and many innocent, blessed people who daily perform heroic acts of kindness, service and life changing conversions, have had their legacies and reputations tainted and improperly blanketed with the unfortunate acts of a few. It’s time to return the Blessed to positions of Respect and Honor that their stations and service deserve.” “I’m writing and publishing the stories of Catholic and Non-Catholic Faith Leaders, their lives, education and works of service to others that fulfill their commitment to God. In an Ecumenical Spirit, hopefully these writings will inspire others to once again celebrate the Spiritual and Pastoral Leaders and Champions of our Neighborhoods, Towns and Cities. God lives and loves us daily and I want to re-affirm God's presence in the World through the stories of these devoted Servants. I hope others in my Position and in my Industry will join me in this purpose.” If you have a Priest, Pastor or Spiritual Leader that you know that we could host at your location for one evening, who would be willing to share some of his or her Spiritual Life experience stories over their favorite Dinner, we would be happy to offer a Discount on your Consulting Services or make a charitable contribution to their efforts. You can save a little on your Consultation by helping with this Faith Based Project. . Please “Contact Us” for more details about “Dinners with Father” at your convenience.
